Ingredients
- 5 pounds of live crawfish
- 8 ears of corn, husked and halved
- 12 baby potatoes
- 1 onion, quartered
- 4 garlic cloves, minced
- 4 lemons, halved
- 3 bay leaves
- 3 tablespoons of Cajun seasoning
- 2 tablespoons of paprika
- 2 tablespoons of salt
- 1 tablespoon of black pepper
- 1 tablespoon of cayenne pepper
- Hot sauce, for serving
Instructions

In a large stockpot, bring water to a boil and add the garlic, onions, bay leaves, and seasonings.

Squeeze the juice of 2 lemons into the pot and add the lemon halves as well.

Add the potatoes and boil for 10 minutes, then add the corn and boil for another 5 minutes.

Add the crawfish and boil for 5-8 minutes until they turn bright red.

Drain the boil and transfer to a serving platter.

Serve hot with hot sauce on the side.
