Ingredients
- 2 ciabatta bread, cut in half horizontally
- 2 tbsp mayonnaise
- 6 tbsp basil pesto, prepared
- 4 tbsp sun dried tomatoes, pureed
- 1 cup red peppers, roasted & cut into strips
- 1 cup feta cheese, crumbled
- 1 cup basil leaves, fresh
Instructions
- In a small bowl, mix together mayonnaise and basil pesto. Set it aside.
- Toast your bread, then spread the pesto onto one half of the bread.
- Spread the other half with sun-dried tomatoes.
- Arrange roasted red peppers on the bottom piece.
- Cover with feta cheese, then fresh basil.
- Top with the remaining slice of bread. Repeat until you have 2 sandwiches.
- Place cocktail picks on opposite ends of the sandwich to hold them in place. Slice each diagonally, forming 2 triangular halves. You should have 4 triangular halves in total.
- Serve immediately!
