Ingredients
- 4 medium courgettes, thinly sliced
- 8 slices of bacon, cooked and crumbled
- 200g (7 oz) brie cheese, rind removed and thinly sliced
- 1 cup grated cheddar cheese
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

In a large baking dish, layer half of the courgette slices, bacon, brie, cheddar cheese, garlic, thyme, salt, and pepper. Repeat with the remaining ingredients.

Pour the heavy cream evenly over the top.

Bake for 30-35 minutes, or until the courgettes are tender and the cheese is melted and bubbly.

Serve hot as a main dish or as a side.
