How To Make Slow Cooked Pork Belly with Watermelon Salsa

Ingredients
- 1.5 kg pork belly
- 2 cloves of garlic, minced
- 1 tbsp paprika
- 1 tsp cumin
- 1 tbsp olive oil
- Salt and pepper, to taste
- 4 cups diced watermelon
- 1 red onion, finely chopped
- 1 jalapeno, seeded and finely chopped
- Juice of 1 lime
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 150°C (300°F).

In a small bowl, combine the minced garlic, paprika, cumin, olive oil, salt, and pepper.

Score the skin of the pork belly with a sharp knife and rub the spice mixture all over the pork.

Place the pork belly in a roasting pan and cover with foil. Cook in the preheated oven for 2.5 hours.

Remove the foil and increase the oven temperature to 220°C (425°F). Cook for an additional 30 minutes or until the skin is crispy.

While the pork cooks, prepare the watermelon salsa by combining the diced watermelon, red onion, jalapeno, lime juice, and salt in a bowl. Mix well and refrigerate until serving.

Once the pork is done, remove it from the oven and let it rest for 10 minutes before slicing.

Serve the sliced pork belly with the watermelon salsa on top. Garnish with fresh cilantro.
