Ingredients

  • 4 slices of rustic bread
  • 1 tbsp olive oil
  • 4 oz prosciutto, sliced
  • 1 lb green beans, trimmed
  • 1 pint cherry tomatoes, halved
  • 2 cloves of garlic, minced
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F. Place the bread slices on a baking sheet and drizzle with olive oil. Toast in the oven for about 8-10 minutes, or until golden and crispy.

  2. In a large skillet, heat oil over medium heat. Add prosciutto slices and cook for 2-3 minutes per side, until crispy. Remove prosciutto from skillet and set aside.

  3. In the same skillet, add the green beans and cook for 5 minutes, until slightly tender. Add cherry tomatoes and garlic, and cook for an additional 3-4 minutes, until tomatoes start to soften.

  4. Drizzle balsamic vinegar over the vegetables and season with salt and pepper. Cook for another 2 minutes, until heated through.

  5. To serve, spread a spoonful of the bean mixture onto each slice of toasted bread. Top with crispy prosciutto and garnish with fresh basil leaves.
