How To Make Smoked Haddock & White Bean Soup

Ingredients
- 400g smoked haddock fillets
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 can (400g) white beans, drained and rinsed
- 1 liter vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat some olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.

Add the smoked haddock fillets, white beans, vegetable broth, dried thyme, salt, and pepper to the pot. Bring to a simmer and let it cook for 20 minutes, or until the haddock is cooked through and flakes easily.

Remove the haddock fillets from the soup and flake them with a fork. Return the flaked haddock to the pot.

Using an immersion blender or a regular blender, blend half of the soup until smooth. This will help thicken the soup.

Return the blended soup to the pot and stir to combine. Cook for another 5 minutes to heat everything through.
