How To Make Cod Curry

Ingredients

  • 4 cod fillets
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp of ginger, grated
  • 2 tbsp of curry powder
  • 1 can of coconut milk
  • 1 cup of vegetable broth
  • 2 tbsp of fish sauce
  • 1 tbsp of lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Season the cod fillets with salt and pepper. Set aside.

  2. In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook until fragrant and the onion is translucent.

  3. Add the curry powder and cook for another minute to release its flavors.

  4. Pour in the coconut milk and vegetable broth. Bring to a simmer.

  5. Gently place the cod fillets into the pot. Cover and cook for about 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

  6. Stir in the fish sauce and lime juice. Adjust the seasoning with salt and pepper if needed.

  7. Serve the cod curry over steamed rice, garnished with fresh cilantro.
