  • 2 grilled chicken breasts, diced
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup sliced almonds
  • 2 tablespoons dried cranberries
  • 2 tablespoons crumbled feta cheese
  • dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste


  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, almonds, dried cranberries, and feta cheese.

  2. In a separate small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper to make the dressing.

  3. Add the diced chicken to the salad bowl and drizzle with the dressing.

  4. Toss everything together until well coated.

  5. Serve the healthy chicken salad immediately.
