- 6 slices of bacon
- 2 cups of diced potatoes
- 1 small onion, diced
- 1 bell pepper, diced
- 4 large eggs
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

In a large skillet, cook the bacon until crispy. Remove from the skillet and crumble into pieces.

In the same skillet, add the diced potatoes and cook until golden brown and crispy. Remove from the skillet and set aside.

In the same skillet, sauté the diced onion and bell pepper until they are softened and slightly caramelized.

Push the onion and bell pepper to the sides of the skillet, creating a space in the middle. Crack the eggs into the empty space and cook until the whites are set but the yolks are still runny.

Sprinkle the cooked bacon, potatoes, and shredded cheddar cheese over the skillet. Cover with a lid and cook for an additional 2-3 minutes, or until the cheese is melted.

Season with salt and pepper to taste. Garnish with chopped fresh parsley.
