Ingredients

  • 5 red potatoes, medium, diced with skin on
  • 1 onion, medium, chopped
  • 1 tbsp garlic powder
  • 1 tbsp kosher salt
  • 2 tsp chili powder
  • 2 tsp smoked paprika
  • ¼ cup extra virgin olive oil
  • 1 cup cheddar cheese, optional, shredded

For Garnish:

  • parsley, chopped

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Place the potatoes and onions in a 9x13-inch baking dish.
  3. Season with garlic powder, salt, paprika, and chili powder. Drizzle with olive oil, then stir to coat the potatoes and onions with the oil and spices.
  4. Bake for 35 to 40 minutes in the preheated oven until the potatoes are fork-tender and slightly crispy.
  5. Stir every 10 minutes. Once done, sprinkle with cheese and let it melt for 5 minutes.
  6. Serve warm with your favorite meat dishes, and enjoy!
