How To Make Dad’s Basic Moist Pork Roast

Ingredients

  • 3 lbs pork roast
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 1 cup chicken broth or stock

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. In a small bowl, mix together the minced garlic, rosemary, thyme, salt, black pepper, and olive oil to create a paste.

  3. Rub the paste all over the pork roast, making sure to cover it completely.

  4. Place the roast in a roasting pan and add the chicken broth or stock to the bottom of the pan.

  5. Cover the pan tightly with aluminum foil and roast in the preheated oven for 2 hours.

  6. Remove the foil and let the roast continue cooking for an additional 15 minutes to allow the top to brown.

  7. Remove the roast from the oven and let it rest for 10 minutes before slicing.

  8. Serve the pork roast with the pan drippings poured over the top.
