Ingredients
- 1 cup long grain white rice
- 1 cup water
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup diced celery
- 2 cloves garlic, minced
- 1/2 pound cooked sausage, sliced
- 1/2 pound cooked chicken, diced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions and parsley for garnish
Instructions

In a microwave-safe dish, combine rice, water, diced tomatoes (with their juice), onion, bell pepper, celery, and garlic.

Microwave on high for 5 minutes, then stir.

Add the sausage, chicken, Cajun seasoning, thyme, oregano, cayenne pepper, paprika, salt, and pepper to the dish and stir well.

Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent.

Microwave on high for 10 minutes, then stir.

Microwave for another 10 minutes or until rice is tender and liquid is absorbed.

Let it sit for 5 minutes, then fluff the rice with a fork.
