Ingredients
- 8 ounces penne pasta
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 cup sliced mushrooms
- 1 cup diced bell peppers
- 1 cup sliced zucchini
- 1 cup sliced yellow squash
- 1 cup diced tomatoes
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions

Cook the penne pasta according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant, about 2 minutes.

Add the mushrooms, bell peppers, zucchini, and yellow squash to the skillet. Cook until the vegetables are tender-crisp, about 5 minutes.

Stir in the diced tomatoes, vegetable broth, heavy cream, dried oregano, salt, and pepper. Cook for another 5 minutes, allowing the flavors to come together.

Add the cooked penne pasta to the skillet and toss until well coated in the creamy sauce.

Serve the creamy penne pasta primavera hot, garnished with grated Parmesan cheese.
