Ingredients

  • 1 cup of cooked brown rice
  • 1 cup of cooked chickpeas
  • 1/2 cup of sunflower seeds
  • 1/4 cup of breadcrumbs
  • 1/4 cup of diced onion
  • 1 clove of garlic, minced
  • 2 tablespoons of soy sauce
  • 1 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • Burger buns
  • Lettuce, tomato, and other desired toppings

Instructions

  1. In a food processor, combine the cooked brown rice, chickpeas, sunflower seeds, breadcrumbs, diced onion, minced garlic, soy sauce, cumin, paprika, salt, and pepper. Pulse until well combined and slightly chunky.

  2. Form the mixture into burger patties, about 1/2-inch thick.

  3. Heat a grill or skillet over medium heat and lightly grease with oil. Cook the patties for about 5 minutes on each side, until golden brown and crispy.

  4. Toast the burger buns on the grill or in a toaster.

  5. Assemble the burgers by placing a cooked patty on the bottom bun, then adding lettuce, tomato, and your desired toppings. Top with the other half of the bun.

  6. Serve the Sunshine Burgers hot and enjoy!
