How To Make Little Crab Cakes & Herby Tartare

- 1 cup lump crab meat
- 1/4 cup mayonnaise
- 1/4 cup bread crumbs
- 1 green onion, finely chopped
- 1 tablespoon chopped fresh parsley
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Old Bay seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup all-purpose flour
- 1 tablespoon vegetable oil
- 1/2 cup tartare sauce
- Fresh parsley, for garnish

In a large mixing bowl, combine the crab meat, mayonnaise, bread crumbs, green onion, parsley, Dijon mustard, Old Bay seasoning, garlic powder, black pepper, and salt. Mix well until all ingredients are evenly incorporated.

Shape the mixture into small, bite-sized crab cakes. Roll each crab cake in the flour to lightly coat.

Heat the vegetable oil in a skillet over medium heat. Add the crab cakes and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.

Serve the crab cakes with tartare sauce on the side for dipping. Garnish with fresh parsley.
