Apple Scrapple Cake Recipe

Apples, cinnamon, pecans and raisins go into this fabulous “fall” cake. It has a homey aroma to it that reminds you of breakfast in the countryside. Prepare this apple cake recipe on mornings that bring out that sunshine in the air.


How To Make Apple Scrapple Cake

Ingredients

  • 3 cup apples, diced
  • 1 cup pecans
  • 1 cup raisins
  • 1 tsp. cinnamon
  • 3 cup flour
  • 3 eggs
  • 1 ¼ cup vegetable oil
  • 1 tsp. salt
  • 2 cup sugar
  • 1 tsp. vanilla
  • 1 tsp. soda

Topping

  • 1 cup brown sugar
  • 1/4 cup milk
  • 1/2 cup butter
  • 1 tsp. vanilla

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream oil, sugar and eggs.
  3. Add soda, salt, flour and cinnamon, which have been sifted together.
  4. Fold in apples, nuts, raisins, vanilla.
  5. Pour into ungreased tube pan and bake for 1 hour and 20 minutes.
  6. Insert a knife into the center to test for doneness before removing from the oven - should come out clean.

To make frosting

  1. Bring ingredients to boil for 3 minutes and pour over cake while both are still warm.
  2. Cut cake loose from sides of pans and punch holes in top of cake with a fork.
  3. Let set 10 minutes, then remove from pan.
