How To Make Easy Mexican Casserole Recipe

There’s nothing better than a hot and fresh casserole right from the oven. For cooking recipes that are failsafe and delicious, look no further and follow these casserole recipes that are sure to garner you some new fans along the way.

Serves:

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 6 flour tortillas
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: sour cream, diced tomatoes, sliced jalapenos, chopped cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large skillet, brown the ground beef over medium heat. Add the onion and garlic, and cook until the onion is translucent.

  3. Stir in the black beans, corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes.

  4. Grease a 9×13 inch baking dish. Place 2 tortillas on the bottom of the dish, overlapping slightly.

  5. Spread half of the beef mixture over the tortillas, followed by a layer of cheese. Repeat with another layer of tortillas, beef mixture, and cheese.

  6. Top with the remaining 2 tortillas, and sprinkle the remaining cheese over the top.

  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

  8. Serve hot with optional toppings, if desired.
