Ingredients

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F.

  2. In a large mixing bowl, combine cooked and shredded chicken, black beans, corn, salsa, sour cream, chili powder, cumin, garlic powder and salt. Mix well.

  3. Spread the mixture into a greased 9×13 inch baking dish and top off with shredded cheddar cheese.

  4. Bake for 35-40 minutes, or until golden and bubbling.

  5. Let the casserole cool before slicing and serving.
