  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp black pepper
  • Optional toppings: sour cream, chives, bacon, cheese

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the potatoes clean and pat them dry with paper towels.

  3. Poke each potato several times with a fork to allow steam to escape during baking.

  4. Rub the potatoes with olive oil, then sprinkle with salt and pepper.

  5. Place the potatoes directly on the oven rack or on a baking sheet lined with foil.

  6. Bake for 45-60 minutes, or until the potatoes are tender and the skins are crispy.

  7. Remove the potatoes from the oven and let them cool for a few minutes.

  8. Slice each potato lengthwise and gently squeeze the ends to open up the middle.

  9. Fluff the potato flesh with a fork.

  10. Serve the baked potatoes hot with your favorite toppings such as sour cream, chives, bacon, or cheese.
