Ingredients

  • 2 cups masa harina (corn flour)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup lard or vegetable shortening
  • 1 1/2 cups chicken broth
  • 1 cup shredded cooked chicken or pork
  • 1/2 cup salsa or enchilada sauce
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • 8-12 dried corn husks, soaked in warm water until pliable

Instructions

  1. In a large mixing bowl, combine the masa harina, baking powder, and salt. Mix well.

  2. Add the lard or vegetable shortening to the bowl and mix until evenly distributed.

  3. Gradually pour in the chicken broth while stirring, until a soft dough forms.

  4. In a separate bowl, combine the shredded chicken or pork, salsa or enchilada sauce, black olives (if using), and cilantro (if using).

  5. Drain the corn husks and pat them dry. Spread a thin layer of masa dough onto each corn husk, leaving a border around the edges.

  6. Spoon a small amount of the filling onto the center of each corn husk and fold the sides of the husk over the filling.

  7. Fold the bottom of the husk up and tie it with a strip of soaked corn husk or kitchen twine to secure.

  8. Place the tamales in a large steamer pot or steamer basket, open side up.

  9. Fill the pot with water until it reaches just below the bottom of the steamer. Cover the pot and steam the tamales for 1 1/2 to 2 hours, or until the masa is firm and cooked through.

  10. Serve the tamales hot, still wrapped in the corn husks. Unwrap before eating.
