  • 1 lb. boneless, skinless chicken breasts, cut into strips
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup of corn
  • 1 tsp. garlic powder
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 cup of shredded cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a bowl, mix together chicken, black beans, canned diced tomatoes, corn, garlic powder, chili powder, cumin, salt, and pepper.

  3. Pour mixture into a 9×13 inch casserole dish.

  4. Top with shredded cheddar cheese.

  5. Bake for 30 minutes or until cheese is melted and bubbly.
