How To Make Creamy Cheddar Cauliflower And Meatball Bake
Ingredients
- 1 pkg meatballs, frozen
- 1 tbsp olive oil
- 1 onion, diced
- 2 cups cauliflower , cut into florets
- 2 tbsp butter
- 3 tbsp flour
- 1 cup milk
- Salt, to taste
- Pepper , to taste
- 1 tsp nutmeg
- 2 cups cheddar cheese, shredded
Instructions
- Preheat oven to 350 degrees.
- Prepare meatballs according to packaging directions and set aside.
- In a large skillet, heat oil and sauté onions until translucent.
- Add cauliflower and sauté for a few more minutes.
- Add butter and allow to melt completely.

Sprinkle in flour and mix well. Slowly pour in the milk and season with salt, pepper, and nutmeg.
- Bring to a boil and immediately reduce heat to a simmer.

Add in about ½ cup of your cheddar cheese and simmer for about 8 minutes as the sauce begins to thicken.

Arrange meatballs in a greased baking dish and evenly spread veggies and sauce over.

Top with remaining cheese and bake for 20 to 30 minutes until bubbly and golden. Serve.
