How To Make Roasted Potatoes with Chives, Bacon, and Maytag Blue Cheese
Serve a tasty appetizer with these tender roasted potatoes topped with smoked bacon and melty cheese, and finished with chives.

Ingredients
- 12small Yukon gold potatoes
- 2tspsalt
- 1tbspextra virgin olive oil
- 1tspfreshly ground pepper
- ½cupMaytag blue cheese,crumbled
- 4sliceapplewood-smoked bacon
- 1tbspchives,minced
Instructions

Preheat oven to 350 degrees F.

Place potatoes in a large saucepan. Cover with cold water and bring to a boil.

Add 2 teaspoons salt and cook for about 20 minutes until tender. Drain.

Once cooled, slice a small piece from the top and bottom of each potato.

Transfer to a medium bowl; toss with oil, remaining salt, and pepper.

Place potatoes on a baking sheet

With a paring knife, score the top of each potato.

Top each with equal amounts of blue cheese and bacon.

Bake for 5 to 7 minutes until cheese melts.

Sprinkle with chives and serve.
