How To Make Roasted Potatoes with Chives, Bacon, and Maytag Blue Cheese

Serve a tasty appetizer with these tender roasted potatoes topped with smoked bacon and melty cheese, and finished with chives.

Ingredients

  • 12small Yukon gold potatoes
  • 2tspsalt
  • 1tbspextra virgin olive oil
  • 1tspfreshly ground pepper
  • ½cupMaytag blue cheese,crumbled
  • 4sliceapplewood-smoked bacon
  • 1tbspchives,minced

Instructions

  1. Preheat oven to 350 degrees F.

  2. Place potatoes in a large saucepan. Cover with cold water and bring to a boil.

  3. Add 2 teaspoons salt and cook for about 20 minutes until tender. Drain.

  4. Once cooled, slice a small piece from the top and bottom of each potato.

  5. Transfer to a medium bowl; toss with oil, remaining salt, and pepper.

  6. Place potatoes on a baking sheet

  7. With a paring knife, score the top of each potato.

  8. Top each with equal amounts of blue cheese and bacon.

  9. Bake for 5 to 7 minutes until cheese melts.

  10. Sprinkle with chives and serve.
