Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 cups basmati rice
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp vegetable oil
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1 tsp salt
  • 2 cups chicken broth
  • 1 cup water
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large oven-safe pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

  3. Add the basmati rice to the pot and cook for 2-3 minutes, stirring occasionally.

  4. Stir in the turmeric powder, cumin powder, paprika, and salt.

  5. Add the chicken thighs to the pot, skin-side up, and pour in the chicken broth and water.

  6. Bring the mixture to a boil, then cover the pot with a lid and transfer it to the preheated oven.

  7. Bake for 45-50 minutes or until the chicken is cooked through and the rice is tender and fully cooked.

  8. Remove the pot from the oven and let it rest for 5 minutes before fluffing the rice with a fork.

  9. Serve the oven-baked chicken pilau garnished with fresh cilantro.
