Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, minced
  • 4 cups tomato puree
  • 2 cups vegetable broth
  • 2 cups corn kernels, fresh or frozen
  • Salt and pepper, to taste
  • 1/4 cup heavy cream
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until softened.

  2. Add minced chipotle peppers and cook for another minute.

  3. Pour in tomato puree and vegetable broth. Bring to a simmer and let cook for 15 minutes.

  4. Meanwhile, heat a grill pan or skillet over high heat. Add corn kernels and char them, stirring occasionally, until they are slightly blackened.

  5. Add charred corn to the soup and simmer for another 5 minutes.

  6. Using an immersion blender or regular blender, puree the soup until smooth.

  7. Season with salt and pepper, to taste. Stir in heavy cream.

  8. Serve hot, garnished with fresh cilantro.
