Ingredients

  • 500g lamb, cut into chunks
  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, sliced
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/4 cup plain yogurt
  • 2 cups water
  • Salt to taste
  • Fresh coriander leaves, for garnish

Instructions

  1. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

  2. Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.

  3. Add sliced onions and sauté until golden brown.

  4. Add minced garlic and grated ginger. Sauté for another minute.

  5. Add the lamb chunks and cook until browned on all sides.

  6. Add chopped tomatoes and cook until they soften.

  7. Add coriander powder, turmeric powder, and garam masala. Mix well.

  8. Add plain yogurt and mix until well combined.

  9. Add soaked and drained rice to the pot. Stir gently to coat the rice with the spices.

  10. Add water and salt to taste. Bring to a boil, then reduce the heat to low.

  11. Cover the pot and let the rice simmer for about 20-25 minutes, or until the rice is cooked and the lamb is tender.

  12. Remove from heat and let it rest for 5 minutes.

  13. Fluff the rice with a fork and garnish with fresh coriander leaves.

  14. Serve hot and enjoy!
