  • 4 ripe tomatoes, diced
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • salt and pepper to taste
  • 4 slices Lancashire cheese
  • 4 slices crusty bread

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add the red onion and garlic, and sauté until softened.

  2. Add the diced tomatoes and cook for 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 20 minutes.

  4. Use a blender or immersion blender to puree the soup until smooth. Season with salt and pepper to taste.

  5. Preheat the broiler. Place the slices of bread on a baking sheet and toast on both sides until golden brown.

  6. Top each slice of toast with a slice of Lancashire cheese. Broil until the cheese is melted and slightly browned.

  7. Ladle the tomato consommé into bowls and serve with the cheese on toast.
