- 4 ripe tomatoes, diced
- 1 red onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 4 cups vegetable broth
- salt and pepper to taste
- 4 slices Lancashire cheese
- 4 slices crusty bread

Heat olive oil in a large saucepan over medium heat. Add the red onion and garlic, and sauté until softened.
