Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 tbsp of garlic butter
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Cut a pocket into each chicken breast, being careful not to cut all the way through.

  3. Place 1 tbsp of garlic butter into each pocket.

  4. In a shallow dish, combine breadcrumbs, Parmesan cheese, parsley, salt, and pepper.

  5. Dip each chicken breast into the breadcrumb mixture, pressing it firmly onto the chicken to adhere.

  6. Heat oil in a large skillet over medium heat.

  7. Add the breaded chicken breasts and cook for 2-3 minutes on each side, until golden brown.

  8. Transfer the chicken breasts to a baking sheet and bake for 12-15 minutes, or until cooked through and the internal temperature reaches 165°F (74°C).

  9. Serve hot and enjoy!
