  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • 1 can (400g) diced tomatoes
  • 1 can (400g) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1/2 cup couscous
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and slightly browned.

  2. Add the ground cumin, coriander, cinnamon, paprika, and cayenne pepper (if using). Stir well to coat the onions and garlic with the spices.

  3. Pour in the diced tomatoes and chickpeas. Stir in the vegetable broth. Bring the soup to a simmer and cook for 15 minutes to allow the flavors to blend.

  4. While the soup simmers, prepare the couscous according to package instructions.

  5. Once the soup is ready, season with salt and pepper to taste.

  6. To serve, place a scoop of cooked couscous into each serving bowl. Ladle the hot soup over the couscous. Garnish with fresh chopped cilantro.
