Ingredients

  • 8 lean turkey sausages
  • 4 slices of lean bacon
  • 4 large eggs
  • 4 cups of baby spinach
  • 2 cups of sliced mushrooms
  • 2 cups of cherry tomatoes
  • 1 avocado, sliced
  • 4 whole wheat toast slices
  • Cooking spray
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the sausages, bacon, mushrooms, and cherry tomatoes on a baking sheet. Spray with cooking spray and season with salt and pepper. Roast in the oven for 20-25 minutes, or until cooked through.

  3. In a separate pan, wilt the baby spinach over medium heat until wilted.

  4. In a non-stick pan, fry the eggs to your desired level of doneness.

  5. Toast the slices of whole wheat toast.

  6. Assemble each plate by dividing the sausages, bacon, mushrooms, tomatoes, spinach, avocado, fried eggs, and toast among four plates.

  7. Serve hot with a side of hot sauce or ketchup, if desired.
