How To Make Spinach & Halloumi Salad

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 8 cups fresh spinach leaves
  • 1 package (8 oz) halloumi cheese, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.

  2. In a large bowl, combine the spinach, cherry tomatoes, red onion, and Kalamata olives.

  3. In a separate small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper. Set aside.

  4. Place the halloumi cheese slices on the preheated grill or grill pan. Cook for 2-3 minutes on each side, until grill marks appear.

  5. Remove the grilled halloumi cheese from the heat and let it cool slightly. Cut it into bite-sized pieces.

  6. Add the grilled halloumi cheese to the salad mixture in the large bowl.

  7. Drizzle the dressing over the salad and toss gently to combine.

  8. Serve the spinach and halloumi salad immediately.
