How To Make Oregano Halloumi with Orzo Salad

Ingredients
- 250g halloumi cheese, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 200g orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 2 tbsp fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Preheat grill or grill pan.

In a bowl, combine olive oil and dried oregano. Brush halloumi slices with the mixture.

Grill halloumi for about 2-3 minutes per side, until nicely charred. Set aside.

Cook orzo pasta according to package instructions. Drain and let cool.

In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, and parsley.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the orzo salad and toss to combine.

Arrange grilled halloumi slices on top of the orzo salad.

Serve the oregano halloumi with orzo salad as a main course or a side dish.
