  • 8 oz halloumi cheese, sliced
  • 4 cups cubed watermelon
  • 2 cups arugula
  • 1/4 cup chopped fresh mint
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper, to taste


  1. Preheat grill to medium-high heat.

  2. Grill halloumi slices for 1-2 minutes per side, until grill marks appear.

  3. In a large bowl, toss together watermelon, arugula, and mint.

  4. Whisk together olive oil and balsamic vinegar to make dressing.

  5. Drizzle dressing over salad and toss to combine.

  6. Top salad with grilled halloumi slices.

  7. Season with salt and pepper to taste.
