How To Make Prawn, Pineapple & Cashew Fried Rice

Ingredients
- 2 cups cooked rice
- 1 cup prawns, peeled and deveined
- 1 cup pineapple chunks
- 1/2 cup cashews
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon vegetable oil
- 2 eggs, beaten
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Heat vegetable oil in a large pan or wok over medium heat.

Add minced garlic and diced onion, and sauté until fragrant and onions are translucent.

Add prawns and cook until they turn pink and opaque.

Push the prawns to the side of the pan and add beaten eggs to the other side. Scramble the eggs until cooked through.

Mix the cooked eggs with the prawns.

Add cooked rice to the pan and stir-fry for a few minutes to break up any clumps.

Stir in soy sauce and fish sauce.

Add pineapple chunks and cashews, and stir-fry for another 2-3 minutes or until heated through.

Season with salt and pepper to taste.

Remove from heat and garnish with fresh cilantro before serving.
