Ingredients

  • 1 block of halloumi cheese, sliced into 1/2 inch pieces
  • 1/4 cup olive oil
  • Juice from one lemon
  • 2 cloves of garlic, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat grill or grill pan to medium-high heat.

  2. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.

  3. Brush both sides of halloumi slices with the olive oil mixture.

  4. Place halloumi slices on the grill and cook for 2-3 minutes per side, or until golden brown grill marks form.

  5. Serve with lemon wedges for squeezing over the grilled cheese.
