Ingredients

  • 8 oz halloumi cheese, cut into slices
  • 1 cup radishes, thinly sliced
  • 1 apple, thinly sliced
  • 1/2 cup pecans, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. In a large bowl, combine radishes, apple slices, and pecans.

  3. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make the dressing.

  4. Grill the halloumi cheese slices for 2-3 minutes on each side until golden brown.

  5. Remove the halloumi from the grill and slice into bite-sized pieces.

  6. Add the grilled halloumi to the bowl with the radish, apple, and pecan mixture.

  7. Drizzle the dressing over the salad and toss gently to combine.
