How To Make Halloumi & Pea Salad

Ingredients
- 250g halloumi cheese, sliced
- 2 cups frozen peas
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

Preheat a grill or grill pan over medium-high heat.

In a pot of boiling water, cook the frozen peas for 2 minutes. Drain and set aside.

Grill the halloumi cheese slices for 2-3 minutes on each side until golden brown grill marks appear. Remove from heat and slice into bite-sized pieces.

In a large bowl, combine the grilled halloumi, peas, cherry tomatoes, red onion, mint leaves, and parsley.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the halloumi & pea salad immediately and enjoy!
