How To Make Halloumi & Pea Salad

Ingredients

  • 250g halloumi cheese, sliced
  • 2 cups frozen peas
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.

  2. In a pot of boiling water, cook the frozen peas for 2 minutes. Drain and set aside.

  3. Grill the halloumi cheese slices for 2-3 minutes on each side until golden brown grill marks appear. Remove from heat and slice into bite-sized pieces.

  4. In a large bowl, combine the grilled halloumi, peas, cherry tomatoes, red onion, mint leaves, and parsley.

  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  6. Serve the halloumi & pea salad immediately and enjoy!
