Ingredients

  • 1 pack of halloumi cheese, sliced
  • 2 oranges, peeled and segmented
  • 1 bunch of fresh mint leaves
  • 4 cups mixed salad greens
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. Grill the halloumi cheese slices for 2-3 minutes on each side until golden brown.

  3. In a large serving bowl, combine the salad greens, orange segments, and mint leaves.

  4. Drizzle the olive oil and lemon juice over the salad, and season with salt and pepper.

  5. Toss the salad gently to coat all the ingredients with the dressing.

  6. Arrange the grilled halloumi on top of the salad.

  7. Serve immediately and enjoy!
