Ingredients

  • 4 whole wheat pitta breads
  • 200g grated cheddar cheese
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Slice open each pitta bread to create a pocket.

  3. In a bowl, mix together the grated cheddar cheese, sliced bell peppers, and red onion.

  4. Stuff each pitta pocket with the cheese and vegetable mixture.

  5. Heat the olive oil in a pan over medium heat.

  6. Place the stuffed pitta pockets in the pan and cook for 2-3 minutes on each side until golden brown and the cheese has melted.

  7. Transfer the pitta pockets to a baking sheet and bake in the preheated oven for an additional 5 minutes to ensure the cheese is fully melted.

  8. Remove from the oven and let cool for a few minutes before serving.

  9. Season with salt and black pepper to taste.
