How To Make Leek, Goat’s Cheese, Walnut & Lemon Tart

Ingredients
- 1 sheet of ready-made shortcrust pastry
- 2 leeks, sliced
- 100g goat’s cheese, crumbled
- 50g walnuts, roughly chopped
- Zest of 1 lemon
- 3 eggs
- 200ml single cream
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Roll out the shortcrust pastry and line a 9-inch tart tin. Prick the base with a fork and blind bake for 10 minutes.

In a pan, sauté the leeks until softened. Remove from heat and set aside.

In a bowl, whisk together the eggs, single cream, lemon zest, salt, and pepper.

Spread the sautéed leeks evenly over the tart base. Top with crumbled goat’s cheese and chopped walnuts.

Pour the egg mixture over the tart filling.

Bake for 30-35 minutes or until the tart is set and golden.

Allow to cool slightly before serving.
