Ingredients
- 1 sheet of ready-made puff pastry
- 2 leeks, sliced
- 1 tbsp olive oil
- 100g goat’s cheese, crumbled
- 2 eggs
- 150ml double cream
- Salt and pepper to taste
Instructions

Preheat your oven to 200°C (180°C for fan ovens) or 400°F.

Roll out the puff pastry sheet and cut it into 4 equal-sized squares. Place the pastry squares into 4 individual tartlet tins.

In a frying pan, heat the olive oil and sauté the leeks until they are soft and translucent. Season with salt and pepper to taste.

In a bowl, whisk together the eggs, double cream, and crumbled goat’s cheese. Season with salt and pepper.

Divide the sautéed leeks evenly among the tartlet tins, then pour the egg and cheese mixture over the leeks.

Bake in the preheated oven for about 30 minutes, or until the tartlets are golden brown and set in the center.

Remove from the oven and allow to cool slightly before serving.
