How To Make Curried Vegetable Pie

Ingredients
- 1 tbsp vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 bell pepper, diced
- 2 carrots, diced
- 1 zucchini, diced
- 1 cup frozen peas
- 1 cup vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- 1 sheet of puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 400°F (200°C).

Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic and sauté until translucent.

Stir in the curry powder and cook for an additional minute.

Add the bell pepper, carrots, zucchini, and peas to the skillet. Cook for about 5 minutes, until the vegetables start to soften.

Pour in the vegetable broth and coconut milk. Season with salt and pepper to taste. Simmer for 10 minutes, until the sauce thickens.

Transfer the vegetable mixture to a baking dish.

Roll out the puff pastry and place it over the baking dish, trimming any excess. Use a fork to prick holes in the pastry.

Brush the pastry with the beaten egg wash.

Bake in the preheated oven for 25-30 minutes, until the pastry is golden brown and crispy.
