Ingredients

  • 1 sheet of store-bought puff pastry
  • 2 courgettes, sliced
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 150g goat’s cheese, crumbled
  • Olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry on a baking sheet lined with parchment paper.

  3. In a separate bowl, toss the courgette slices with olive oil, lemon zest, lemon juice, salt, and pepper.

  4. Spread the crumbled goat’s cheese evenly over the puff pastry, leaving a border around the edges.

  5. Arrange the marinated courgette slices on top of the goat’s cheese.

  6. Fold the edges of the puff pastry over the courgette, creating a rustic border.

  7. Drizzle the galette with olive oil and season with salt and pepper.

  8. Bake in the preheated oven for 30-40 minutes, or until the pastry is golden brown and the courgette is tender and slightly charred.

  9. Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
