Ingredients

  • 4 medium tomatoes, sliced
  • 1 head of garlic, roasted
  • 4 sheets of puff pastry
  • 8 ounces of goat’s cheese, crumbled
  • 1 tablespoon of fresh thyme leaves
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the sliced tomatoes on a baking sheet and drizzle with olive oil, salt, and pepper. Roast for 15 minutes.

  3. Squeeze the roasted garlic cloves out of their skins and set aside.

  4. Roll out the puff pastry sheets and cut into 4 equal-sized squares.

  5. Place the puff pastry squares on a baking sheet lined with parchment paper.

  6. Spread a layer of roasted garlic on each square, leaving a small border around the edges.

  7. Top the garlic with the roasted tomato slices.

  8. Sprinkle the goat’s cheese and thyme leaves over the tomatoes.

  9. Season with salt and pepper.

  10. Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden and crisp.

  11. Serve warm and enjoy!
