How To Make Jersey Royals, Courgette & Goat’s Cheese Tart

Ingredients
- 1 sheet of puff pastry
- 500g Jersey Royals, boiled and halved
- 2 courgettes, thinly sliced
- 150g goat’s cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp fresh thyme leaves
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheet and place it on a baking tray lined with parchment paper.

Arrange the boiled and halved Jersey Royals on the puff pastry.

Top with the thinly sliced courgettes and crumbled goat’s cheese.

Drizzle with olive oil and sprinkle with fresh thyme leaves, salt, and pepper.

Place in the preheated oven and bake for 30-40 minutes, or until the pastry is golden and the courgettes are tender.

Remove from the oven and let cool slightly before serving.
