How To Make Fragrant Courgette & Prawn Curry

Ingredients

  • 2 courgettes, thinly sliced
  • 300g prawns, peeled and deveined
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 1 red chili, deseeded and chopped
  • 1 tsp turmeric powder
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 400ml coconut milk
  • Juice of 1 lime
  • Handful of fresh coriander leaves, chopped
  • Salt and pepper, to taste
  • Cooked rice, to serve

Instructions

  1. Heat oil in a large pan over medium heat. Add the onion, garlic, ginger, and chili. Cook until the onion is soft and translucent.

  2. Add the turmeric, cumin, and coriander. Stir well to coat the onion mixture with the spices.

  3. Add the courgettes and cook for 5 minutes, until slightly softened.

  4. Stir in the prawns and cook for another 3-4 minutes, until they turn pink and opaque.

  5. Pour in the coconut milk and bring to a simmer. Cook for 10 minutes, until the flavors have melded together.

  6. Stir in the lime juice and fresh coriander. Season with salt and pepper to taste.

  7. Serve the fragrant courgette and prawn curry over cooked rice.
