How To Make Celebration Fish Platter

Ingredients
- 4 fish fillets (such as salmon or trout)
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cucumbers, sliced
- 1 red onion, thinly sliced
- 1 jalapeno, seeds removed and thinly sliced
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1/2 tsp red pepper flakes
- 1/4 cup fresh cilantro, chopped
Instructions

Preheat grill or oven to medium-high heat.

In a small bowl, combine olive oil, paprika, garlic powder, salt, and black pepper. Rub the mixture onto both sides of the fish fillets.

Grill or bake the fish fillets for 6-8 minutes per side, until cooked through and flaky.

In a large bowl, combine the sliced cucumbers, red onion, jalapeno, rice vinegar, honey, red pepper flakes, and cilantro. Toss well to coat everything in the dressing.

Arrange the grilled fish fillets on a platter and serve with the spiced cucumber salad on the side.
