How To Make Leek & Goat’s Cheese Traybake Tart

Ingredients
- 1 sheet of puff pastry
- 2 leeks, sliced
- 150g goat’s cheese, crumbled
- 2 eggs
- 200ml heavy cream
- Salt and pepper to taste
- Fresh thyme leaves for garnish
Instructions

Preheat the oven to 200°C (400°F).

Roll out the puff pastry and place it onto a baking tray. Score a border around the pastry, about 2cm from the edges.

In a frying pan, sauté the leeks in a little oil until softened and caramelized. Season with salt and pepper.

Spread the caramelized leeks evenly over the puff pastry, within the border.

In a bowl, whisk together the eggs, cream, salt, and pepper. Pour this mixture over the leeks.

Sprinkle the crumbled goat’s cheese on top.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the filling is set.

Garnish with fresh thyme leaves before serving.
