How To Make Leek & Goat’s Cheese Traybake Tart

Ingredients

  • 1 sheet of puff pastry
  • 2 leeks, sliced
  • 150g goat’s cheese, crumbled
  • 2 eggs
  • 200ml heavy cream
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry and place it onto a baking tray. Score a border around the pastry, about 2cm from the edges.

  3. In a frying pan, sauté the leeks in a little oil until softened and caramelized. Season with salt and pepper.

  4. Spread the caramelized leeks evenly over the puff pastry, within the border.

  5. In a bowl, whisk together the eggs, cream, salt, and pepper. Pour this mixture over the leeks.

  6. Sprinkle the crumbled goat’s cheese on top.

  7. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the filling is set.

  8. Garnish with fresh thyme leaves before serving.
