How To Make Courgette & Feta Muffins

Ingredients
- 2 medium courgettes, grated
- 200g feta cheese, crumbled
- 2 spring onions, finely sliced
- 200g self-raising flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 eggs, beaten
- 100ml milk
- 3 tbsp olive oil
- Freshly ground black pepper
Instructions

Preheat the oven to 180°C (350°F) and line a muffin tin with paper cases.

In a mixing bowl, combine the grated courgettes, feta cheese, and spring onions.

In a separate bowl, whisk together the self-raising flour, baking powder, and salt.

Add the beaten eggs, milk, olive oil, and black pepper to the courgette mixture. Stir well to combine.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Spoon the batter into the prepared muffin tin, filling each case about 3/4 full.

Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Serve the courgette & feta muffins warm or at room temperature.
