Ingredients

  • 2 sweet potatoes, peeled and cubed
  • 1 small butternut squash, peeled and cubed
  • 4 cloves of garlic, peeled
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of nutmeg
  • 2 tablespoons of butter
  • 1/4 cup of milk (or more, as needed)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the sweet potatoes, squash, and garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper. Toss to coat.

  3. Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and slightly caramelized, stirring once halfway through.

  4. Transfer the roasted vegetables to a large bowl. Add the nutmeg, butter, and milk. Mash everything together until smooth and creamy. Add more milk if needed for desired consistency.

  5. Serve warm as a side dish.
